Thay vì xào ốc len đắc đỏ, thì ốc đinh xào dừa vừa rẻ vừa ngon không kém, thịt ốc đinh mềm dai dai, thân dài thấm cốt dừa béo ngậy, thơm thơm vị sả, nguyên liệu lại dễ mua.
Sả cây rửa sạch, dùng cán dao đập dập phần đầu trắng, sau đó cắt khúc khoảng 2 lóng tay. Rau răm rửa sạch nhặt lấy lá.
Ốc mua về xả dưới vòi nước 1 lần. Sau đó mang chặt bỏ phần đuôi, khoảng 1/2 thân ốc. Chặt xong rửa lại với nước, để bỏ đi sạn vỏ.
Vắt nước dừa: Cho dừa nạo ra thau rộng rãi. Đong sẵn 1 tô nước ấm, đổ hết nước ấm vào dừa, dùng tay nhồi, vắt lấy 1 tô cốt dừa đầu tiên. Để riêng qua một bên. Tiếp tục cho 800 ml nước vào dừa nạo, nhồi liên tục, vắt lấy nước dảo.
Nấu sôi 1 nồi nước, khi nước sôi già, cho ốc vào luộc khoảng 5 phút. Dùng đũa xóc lên cho ốc chín đều. Ốc chín đổ ra rổ cho ráo nước.
Cho chảo lên bếp, đun nóng 3 muỗng canh dầu ăn, cho tỏi vào phi vàng thơm.
Tỏi vừa vàng tới thì cho ốc, sả cây vào, đảo đều tay trong 3 phút thì trút nước dừa dảo vô chảo, nêm nếm gia vị muối, đường, bột ngọt, xào đều cho ngấm.
Cuối cùng trút phần cốt dừa vô chảo ốc. Xào cho dừa ngấm đều ốc, vặn lửa nhỏ nấu thêm khoảng 5 phút cho nước có độ sền sệt là được. Nếm lại cân chỉnh gia vị cho vừa miệng.
Tắt bếp rắc rau râm lên trên khi ốc còn nóng. Khi ăn múc ra đĩa trũng, cùng nước dừa. Món này còn được gọi là ốc hút, cách ăn cũng giống như ốc len hầm dừa.
